Stone Brewing Co’s Greg Koch

During lunch I swung over to Royal Liquors on State Line and 103rd St. (Kansas City). Greg was supposed to host a tasting and signing from 12-1p… I showed up right around 12 with no one in sight…

Did anyone else go through a 'conversion' phase before 'enlightenment'?

I was thinking about this on the way back & forth to work (I have a 1.5 hr round trip for work / day).  There was a time when I would try and convert people from drinking, what I call, "fast food" beers.  You know the ones I'm talking about, I don't think I need to bring them up here.  Even to the point of berating when they would say "Well it's the King of Beers", I would reply with "Well that's not surprising since it tastes like it came out of a 'throne'. Washing Yeast

I keep things pretty simple when in comes to using yeast, pitch a large, healthy amount. I feel confident in the beer quality if I can get a quick and vigorous ferment to occur within twelve hours. If I'm using the dry packets like Safale, which are inexpensive enough to be generous, I pitch three packets directly into ten gallons of aerated wort. I don't bother re-hydrating the yeast. Reusing yeast

This article is getting quite a few hits on my blog, so I thought I'd repost it here.



When I had finished bottling my pale ale on Monday night, I had a couple of inches of yeast slurry in the bottom of my fermenter.
